Soulful Fusion: Fufu and Eru - A Taste of Cameroon.

Today, we dive into the heart of Cameroon to savour the delightful fusion of textures and flavours in "Fufu and Eru." What is Fufu and Eru? Fufu, a staple in many West and Central African countries, is a dough-like dish made from starchy ingredients like cassava, plantains, or yams. Paired with Eru, a nutritious and leafy vegetable native to Central Africa, the combination creates a hearty and soulful meal.


Ingredients.

For the Fufu:

  • cassava flower or yam flower
  • water
  •   
  •     For the Eru Soup:
  •   Eru leaves
  •   waterleaf
  • stock fish, smoked fish, cow skin, cow tripe,
  • palm oil, onion, garlic, crayfish, salt and pepper.

Instructions:

  1. Prepare the Fufu:

    • In a bowl, gradually mix cassava or yam flour with water, stirring continuously to avoid lumps. Cook the mixture over low heat until it thickens, then knead until smooth. Shape into round balls.
  2. Cook the Eru Soup:

    • In a pot, heat palm oil and sauté onions and garlic until fragrant. Add the stockfish, smoked fish, cow skin( pre-cooked) and cow tripe. Cook for a few minutes.
  3. Add Eru Leaves and Waterleaf:

    • Stir in the chopped Eru leaves and waterleaf. Cook until the leaves are wilted and the flavors meld together.
  4. Season and Simmer:

    • Season the soup with ground crayfish, salt, and pepper. Allow it to simmer over low heat, allowing the flavors to intensify.
  5. Serve and Enjoy:

    • Plate the fufu alongside a generous serving of Eru Soup. The soft, doughy fufu is a perfect complement to the flavorful and nutrient-packed Eru.
