Ingredients:
Ten cups of rice, tomatoes, red bell pepper, scotch bonnet pepper, onions, garlics, curry powder, vegetable oil, green leaves. salt and pepper to taste, diced carrots, paprika, boiled spiced meat.
Instructions:
Rinse rice thoroughly in cold water to reduce the excess starch, then parboil the rice by boiling it in water for about 10 minutes until its partially cooked. drain and set aside.
Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and stir until they're golden and fragrant.
Stir in the blended tomatoes, red bell pepper, and scotch bonnet pepper. Cook the mixture for a few minutes until it thickens slightly.
Add the tomato paste, curry powder, paprika, salt, and pepper. Stir well to incorporate the flavors and cook for an additional 2-3 minutes.
Gently add the parboiled rice to the pot, ensuring it is evenly distributed. Pour in the boiled meat ensuring that the rice is fully submerged. If desired, add diced carrots, peas, or other vegetables for extra flavor and colour.
Bring the mixture to a boil and reduce the heat to low. Allow the rice to boil for about 25 minutes. Avoid stirring to prevent it from becoming mushy. once its cooked turn off the heat and serve on a plate.
