Ndole: A savoury Delight from Cameroon - A Step - by - Step Guide"

Today, we embark on a culinary journey to Cameroon, where we'll explore the tantalizing flavors of Ndole. This traditional Cameroonian dish combines tender bitter leaf greens, richly spiced groundnuts, and an assortment of proteins to create a savoury and satisfying meal.
Ingredients:
- 2 cups of bitterleaf
- 1 cup of groundnuts (peanuts), roasted and finely ground
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons of red palm oil
- 1 pound of protein (chicken, beef, or fish)
- 5 tablespoons of crayfish powder (optional)
- 1 teaspoon of ground pepper
- Salt to taste
- If using bitterleaf, rinse it thoroughly to reduce bitterness. Boil the leaves in water for about 10 minutes, then drain and chop finely. In a large pot, heat the red palm oil over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden and fragrant. Add the protein of your choice (chicken, beef, or fish) to the pot and cook. Remove the protein from the pot and set it aside. In the same pot, add the finely ground groundnuts and stir well to combine with the sautéed aromatics. Cook the groundnut mixture for about 5 minutes, stirring frequently to prevent burning.
- Add the bitterleaf, to the pot and stir it into the groundnut sauce. Continue cooking for another 5 minutes, allowing the flavors to meld together.
- Add the crayfish powder, ground pepper and salt to taste
- Reduce the heat to low and let the Ndole simmer for about 15-20 minutes, allowing the flavors to deepen and the sauce to thicken.
- Once the Ndole is cooked to perfection, serve it hot with a side of steamed rice, plantains, or fufu.
